So, this recipe took about 2 hours and 30 minutes to bake! So consider I suggest you start the prep early if this is your dinner!

Prep itself took me a while because I’m not that great at cutting veggies! However if you are a pro at cutting or have a vegetable slicer, you’ll blow through this in no time.

I chose zucchini and carrots because those are my favorite vegetables together. This is also the perfect recipe when you have too many vegetables to eat before they spoil and you need to cook them before then.

You can use any veggies like; squash, eggplant, kale, spinach, etc. This meal was under $10 by the way! I bought a ton of fresh ingredients like carrots, bok choy, asparagus, onions, tomatoes, broccoli, potatoes and more for around $25.00! However, because I’m only using these particular ingredients, this is about a $10 meal including the peas and cream of chicken!

EVERYTHING IS OPTIONAL! I love onions, peas, carrots, zucchini and potatoes. There are so many ways you can make this dish, so add whatever you like!

I do however suggest thick veggies slices and a thick liquid base so it can cook properly.

If you enjoy meat you can add ground turkey, pork or beef! I didn't want any in this recipe, but I did want the flavor of chicken so I used cream of chicken as my liquid base.


When you cut your potatoes and they are cleaned well, put them in a bowl of water and it'll create starch water.

You can use a vegan "chicken or beef" dissolve block or vegetable stock as your liquid! Add a spoonful of starch water and boil it so it becomes a thick sauce. If you have starch or flour that will work too!


  • 6 small potatoes

  • 2 large zucchini

  • 3 carrots

  • 1 red onion

  • 2 cans of Cream of Chicken

  • 1 can of peas

  • 1/3 cup of water

  • 1 tablespoon of pepper

  • 1 tablespoon of garlic powder

  • 1 teaspoon of salt

To make it healthier you can use vegetable stock with starch to thicken the stock instead of cream of chicken.

First thing you want to do is preheat your oven to 375 degrees. Next, cut up the veggies and potatoes so its ready to layer in your chosen pan!

I clean all my vegetables and peel them how I like. I always leave a little skin on my potatoes but not much!

Cut them as evenly as possible, when you see my result they are not cut evenly, but I tried… really.

When I work with potatoes from a Famers Market I make sure to clean them extra well because I know they are fresh and came straight from the dirt. I let them soak in water for 2 minutes as whole potatoes. Then I take a vegetable bristle brush and scrub them under cold running water. After that I peel some of the skin off, and this is the process for all veggies I make.

Anyway, take two cans of cream of chicken and put in a bowl!

Drain the can of peas or you can use frozen peas and add them to the mix!

Choose how thick or thin you want your sauce I added about 1/3 cup of water to loosen it.

After that layer your ingredients how ever you want! I use a smaller dish than I thought so I actually had left over potatoes! I do suggest you use a pretty big dish for this amount! Once layered, I used the last of cream of chicken and watered it down a bit more so I could pour the last of it on top. Then I shook the dish and added more water to let it soak to the other veggies in the middle and bottom! Sprinkle some salt, pepper and garlic powder for extra flavor! Cover with foil!

Put it in the oven for 2 hours and a half, I suggest have a flat pan underneath incase too much water was added and it boils. Occasionally through cooking I would suggest stirring and rotating the potatoes and veggies so it cooks better. Then cover back with foil.

Poke a fork through the potatoes and carrots to make sure it's cooked!

Serving Suggestion:

Sprinkle a little mild or sharp cheddar cheese for added salt and taste, either on the whole dish or personal bowl!

I was so happy with how turned out, this is delicious to have on a cold night huddled up in a blanket watching a movie. It's an easy meal to bring to work and its good for those who don't like vegetables but want to eat healthier.
